Pauly is from Joliet and has been brewing for 10 years.  He was a founding member of the Joliet Brewers Guild (JBG).  He learned to brew at the Flossmor Station and has won a silver medal at the Charlie Orr Chrome Brew Competition for his Hazy IPA.  He has won numerous medals where his beer was scaled and brewed on a professional level and sold at several local breweries.  Pauly states that an honest beer with a lingering hop has taken him this far that shocked and persuaded his soul to ignite.  He is forever grateful for his passion he has to bring you tasty beer and we are happy to have him in our brewery family at OSB.
